Sweet white from dried Malvasia di Candia Aromatica, it was born from the desire to explore a version of Passito very little widespread in Italy: a wine based more on freshness and elegance than on heavily overripe aromas and opulent taste; a non-cloying wine that captures the autumnal moods of our climate habitat.
The grapes come from vineyards that extend over hills adjacent to the mountain, at an altitude between 450 and 550 m asl, on calcareous soils of gravelly conformation subjected to strong temperature changes.
Vin San Giusto 2007 is a sweet wine made from Malvasia (90%) and Trebbiano (10%) picked by hand at full maturity and naturally dried for about 120 days in a well ventilated place. It is a wine suitable for long aging, to be enjoyed at cellar temperature (10°C) .
