Domaine Dujac was founded by Jacques Seysses in 1968, after it has previously collaborated with Domaine de la Pousse d'Or for over two years. Initially the hectares purchased were 4.50, all enclosed in the Village of Morey-St-Denis and the Domaine Grillet. In 1969 they acquired in 0.68Ha Echezeaux Grand Cru and Grand Cru Bonnes Mares 0:44 Ha; a year later it was the 1.95Ha of Clos de la Roche. The last major acquisition was in 2005 when they acquired major land in Grand Cru Chambertin, Romanee-St.-Vivant and Premier Cru Malconsorts in Vosne-Romanée. Currently the Domaine Dujac is run by his sons Jeremy and Alec, and the care of the vineyards is carried out by Lilian Robin; in the vineyard is practiced lutte integree, with a face turned to biodynamic viticulture. Since 1986 in the vineyards are not used herbicides or any kind of chemical treatment, the farming method used is the traditional Guyot on old vines and the royal cordon on new plantings. In the cellar the wine making operations involving minimal human intervention: the grapes are vinified with the stalks and alcoholic fermentation is activated by only indigenous yeasts, temperatures at this stage rarely exceed 30 °. The aging takes place in new piece to 90-100% for the Grand Cru, 60% for Premier Cru and to 45% for the Village; dell'elevage the duration is approximately 18 months. This is how wines with a strong personality, with a particular style made of medium transparency color, intense fruit flavors and pleasant textures silky in the mouth.
