Cà del Vént is a wine company recently established consisting of 7 hectares of vineyards and located on the top of the clay-limestone hills of Campiani of Cellatica (350-430 m. S.l.m.), protected park that characterizes the eastern border of Franciacorta. The peculiarity of these places is a dense network of underground springs, independent of each other that, over time, have created a mosaic of very diverse soils. Each vineyard or vineyard portion undergoes the influence of the spring that irrigates. In 2006, with the transformation of Cà del Vént from reality hobby to company winemaking, it has started the project of Microzonazione thanks to which have been identified 13 different micro-zones (the complete mapping work is available on the website www.cadelvent.com ). In order to accompany the distinctive characteristics of each micro-zone within the single grape, each vineyard or vineyard portion is cured with customized agronomic practices, implementing the principles of biodynamic viticulture. In the winery, the grapes from each micro-zone is carefully tasted it, it is at this stage that it's decided how goes on in the process: the goal of work in the cellar it's to create a wine that gives the same flavor and scent of its must. They are never mixed grapes or grape must derived from different micro-zones or different vinification. Every year they get about 25 different bases spumante, 2 white wines and 15 red wines, all vintages. Except Cellatica (local red wine), all the bases are fermented in barrels trying to get a finished wine that has the same energy potential of the bunch. They do not resort to any stabilization, no fining or filtration and no addition of any product to grapes. Since 2010, Cà del Vént is one of 142 European companies invited to VinNatur, association of natural winemakers. Be part of the association implies the obligation to annually submit wines to the analysis of residues of chemical and toxic products for humans, as well as the taste evaluation that guarantees the natural character, personality and territoriality of the products. Failure to comply with these two parameters result implies expulsion from the association.
