The winery

Sylvie Esmonin graduated in Agronimics Engineering in the University of Montpellier and has worked as a winemaker for several cellars and in different places until 1986 when, following the father's request Michel, took over the company reins radically transforming the philosophy of the Domaine . Until then the grapes were sold to Negoce while with the advent of Sylvie in command, she has decided to make wine on her own and to bottle her own labels. In 1989 she performed the first bottling resulting from the 3 hectares of vineyards owned. In 1998 her father Michel retires and since then she has expanded vineyard to current 8 hectares: the vineyards are all very old, some planted by his grandfather. In the vineyard is practiced meticulous care of health of the plant, the philosophy is to produce a "natural" wine experiencing organic practices / biodynamic without ever yielding to fundamentalist tendencies. In the cellar the wine provides a part of de-stemmed grapes (70% top range wines, 30% intermediate and wines without the Bourgogne AOC) and using only indigenous yeasts. The use of barrels for aging provides containers used for Burgundy wines and AOC Village while 1er Crù rise in new barrels for 80%. The wines have a very similar style to Sylvie Esmonin personality: you may well outline a "feminine" aspect, but at the same time energetic and determined; the use of new wood is very well balanced and allows you to never miss a territorial grip wire wine.
