Bourgeois-Diaz has operated for four generations over an area of seven hectares, divided into thirty plots distributed between Crouttes sur Marne and the surrounding municipalities. The vineyards rest on limestone-clay soils, mostly exposed southwest and planted with 55% Pinot Meunier, 30% Pinot Noir and 15% Chardonnay; in the vineyard since 2010 they do not use herbicides and synthetic products since 2007; the company has been since then in biodynamic conversion, in fact, currently only 4 hectares are certified organic. The harvest is manual type with selection of only perfectly ripe grapes that arrive in the cellar. The juice is a result of using traditional presses, and the winemaking take place both in stainless steel tanks and in oak barrels depending on the year and types. The Cuvée based face a period of 24 months of "rest" in the basement while the most important Cuvee up to 60 months, these are generally inclusive of all three grape varieties from the Domaine. All wines develop malolactic fermentation.
