Produced from Chardonnay grapes grown in the Saint Aubin Aoc classified vineyard. The vines were planted in 1982 with southern exposure on calcareous soils. In the cellar the wines of the Domaine Marc Colin are vinified in the traditional way, by carrying out alcoholic and malolactic fermentation in a Burgundian piece, the wooden elevating lasts 10 months.
For several generations, "Colin" is a name of old families of Burgundy, they are winemakers in Cote de Beaune. Marc Colin settled in St Aubin in 1979 with his wife, and their children gradually joined the domaine. Today Joseph, Damien and Caroline share the work of the domaine. Through the seasons, meticulous work can pick up the best grapes. In the vineyards there is a lot of work for natural grassing, the lutte raisonnèe for diseases, the control of yields, the manual harvesting, are the constraints that the field imposes to make wine only the healthiest harvest. A modern and functional cellar allows a rigorous control of fermentation and vinification. Aging in barriques inside the domaine.
