The Domaine Georges Roumier is without doubt one of the most famous and sought after Domaine de Bourgogne. The historic winery is located in Chambolle-Musigny, Cote de Nuits: right here, in 1924, it all began with the marriage of Georges and Geneviève Roumier Quanquin, who brought as a dowry vineyards of the caliber like Les Amoureuses, Fuées and Les Bonnes -Mares. In the 50s the Domaine has acquired other important wine-growing land in the Clos Vougeot, the Clos de la Bussiere in Morey St Denis, in Corton-Charlemagne and in the grand Musigny. Since 1982 the Domaine has been run by Christophe Roumier, he graduated in Oenology in Dijon and he is an hard worker. His choices in the vineyard shall minimize any kind of treatment, herbicides and chemical have been banned, land regularly tilled and the vineyards kept healthy and well ventilated. The training system used is the Guyot, with effeuillage operations carried out in the summer on the north side of the plant; Christophe recently is emerging on the principles of Biodynamics. Christopher attaches great importance to the age of the vineyards, much to replant a vineyard only when the vine has reached 50 years. The Domaine Roumier make the harvest by hand, generally later than other manufacturers, one by one by selecting the best grapes. In the cellar the grapes are de-stemmed in different proportions depending on the vintage and the Cru; the fermentation is slow and natural and triggered by indigenous yeast, the maceration lasts 25 days and is carried out in steel. The wine aging takes place in new pièce 20% for the Village, to 25-35% for the Premier Cru and Grand Cru for 35-45%; Christophe purposely delaying malolactic maintaining low temperatures, elevating its wooden wine for 18 months, until April 2 after the harvest. The wine is then bottled and left a few months in the bottle.
The wines of the Domaine Roumier are sensual, elegant, pure and crystalline, qualities that were maintained over the years due to the great potential for aging. The Christophe personality is well reflected in his wine, precise and meticulous, always looking for harmony and balance.
