Fattoria Le Casalte is a small emerging company, located in the heart of the DOCG Vino Nobile di Montepulciano and managed by the talented Chiara Barioffi. Chiara's family owns Le Casalte since 1975, initially was an old Tuscan farmhouse abandoned but, over the years, became a real winery. The management of Chiara began twenty years ago: in the vineyard are banned chemicals and herbicides, only copper and sulfur are used when needed. In the cellar she is assisted by Paolo Salvi since 1999, a time when the company made use of the Master taster Giulio Gambelli; the winemaking take place in steel and maturation in large barrels for a year, in the case of Rosso di Montepulciano, and two years for Nobile di Montepulciano and the Quercetonda. Barioffi family has also a small production of Vin Santo, not produced every year, which is aged in wooden barrels for at least 10 years. The wines have austere and strong character, The Querciatonda takes from the vineyard (bred to tree) concentration and richness of polyphenols, while the wines coming from the Vineyard Poggione are strict and very expressive.
