The Domaine Joseph Voillot was born in the late nineteenth century, and since 1995 has been run by Jean-Pierre Charlot, a former courtier and professor of oenology at the Lycée Viticultural of Beaune and son of Joseph Voillot. The vineyards are located in the towns of Volnay, Pommard, Meursault and Beaune. Jean-Pierre works his vineyards' land 2-3 times a year, his philosophy is essential and little interventionist.
The harvest is manual, with selection of the best grapes; vinification is conducted in the traditional way, without the addition of selected yeasts and each wine fermented in a different container. After 3 or 4 days of maceration begins the fermentation at a controlled temperature (32°C) - to preserve the fruity aromas - for a period of 12-14 days depending on the appellations and vintages. All the wines are elevated in new barrels to 25% for a period of 16-18 months.
The its wines, classic system, show a refined aromatic personality; they are terse and transparently reveal their terroir with extreme ease. A constant is the strong tannic-acid frame, resting on adequate pulp and full. rigorous wines, but jovial and full of juice.
