The vineyard from which the Meursault 1er Cru Les Poruzots derives is used since 1992, a part of the grapes are owned while the remainder by a tenant who cultivates the vineyard with the same provisions as the Domaine MikulskiIts surface is 25 hectares and is exposed to the east on the hill of Meursault with vineyards that are about 50 years old.
This wine comes from the parcels of Limozin, which, in some particularly favorable years, are vinified separately. The total area is 0.15 hectares. The average age of the vines is 65 years. Its vine is 100% Chardonnay with an annual production of about 600 bottles. The vine is grown in non-certified organic farming.
François Mikulski has been working the uncle Pierre Boillot's vineyards since 1991 and since 2004, the year of the family's death, he labels the bottles under his own name. The Domaine Mikulski consists of about 9 hectares, some of which are rented, which produce 50,000 bottles a year on average; in the vineyard we work according to the dictates of Organic Agriculture without however showing off certifications or initials. The soils are fed by compost of their own production and are regularly plowed, the goal is to preserve the natural ecosystem of the vineyard. François Mikulski aims to produce elegant and extremely pure wines: yields are around 45 Hl / Ha per hectare for whites and 35 Hl / Ha for red wines. In the cellar only indigenous yeasts are used for fermentation, vinification is carried out for 3-4 months in natural rock cellars where the temperature does not exceed 6-8 degrees. The aging of the wines takes place in new woods at 20% for a duration of 12-16 months, before being put on the market the wines rest in glass for a few months.
