The climate is extreme and continental with very little rain, lots of sun and strong thermal contrasts between day and night, which favor the correct ripening of the grapes. San Román spends 24 months of aging in French and American oak barrels; it is a deep, powerful and elegant wine. A wine with a long history of bottle aging.
