The grapes come from different vineyards planted with 45-year-old vines at an altitude of 750 meters above sea level, with stony and sandy-clayey soil. The climate is extreme and continental with very little rain, lots of sun and strong thermal contrasts between day and night, which favor the correct ripening of the grapes. San Román spends 24 months of aging in French and American oak barrels; it is a deep, powerful and elegant wine. A wine with a long history of bottle aging.
It has a beautiful dark cherry color, the nose is a very fragrant and expressive wine, with aromas of red fruits, black fruit, cinnamon, snuff and hints of toasted wood.
