With the creation of the Domaine Heresztyn-Mazzini, a new adventure begins for Florence and Simon. After ten years of work on the family estate in Gevrey-Chambertin, the couple decided to start their own path.
It currently manages 5.5 hectares distributed over the villages of Gevrey-Chambertin, Morey-Saint-Denis and Chambolle-Musigny. 2012 marks the first vintage of the Heresztyn-Mazzini estate, specialist in the great red wines of Burgundy.

If Florence and Simon Heresztyn-Mazzini are part of family continuity, they express their common vision of wine, contemporary and dynamic. Attached to the Côte de Nuits and its unique terroirs, they work daily to reveal their best expression. Both make it a point of honor to respect the soil and nature.

Their wines speak of the various climat from which they come. The goal is to get the best raw material, grapes, to produce bottles that reveal the identity of the wines of the domaine.

On the Heresztyn-Mazzini estate, reflection takes precedence over action. Any work done, in the vineyard or in the cellar, is carefully considered. Respectful of the environment of nature, Florence and Simon follow for the moment the principles of the lutte Raisonnée. Both are permanently on the ground, to follow the evolution of the plant.
After several years of vinification, they chose whole winemaking on some parcels, to structure the wine and regulate astringency. After three weeks of maceration, the wines are aged in barriques from 12 to 16 months. The couple attaches great importance to the choice of coopers. The bottling takes place in the domaine, taking into account the lunar calendar, so as not to hasten the process.
