Domaine Fanny Sabre

Fanny Sabre is a young producer based in the center of the town of Beaune, but she has already carved out an important space for herself among the most important producers of Burgundy.
Making wine was not her first thought. She first studied law, but after the death of her father she had to take over the company, and first with the help of Philippe Pacalet, and then alone, she discovered a talent and a dedication to the work that belonged to her father who l 'has led to being one of the coolest names in the area.

In fact, it does practically everything by itself, from following the various vineyards that total about 4 and a half hectares, from pruning to vinification and bottling in the small cellar. The work with Pacalet led her to a change in the philosophy of managing the vineyards and the cellar compared to the time in which her father made wine, moving to biodynamics and choosing to vinify the various parcels separately, using indigenous yeasts and even changing the press with which it works to have a softer impact on the grapes, vinification and aging in wood always seeking the maximum expressiveness of the different climats, minimum sulfur at bottling.

The Winery
