It comes from Nebbiolo grapes grown in the historic Rocche di Castiglione vineyard in Castiglione Falletto on an area of 1.3 hectares; the vineyard is 46 years old with South-East exposure. The training system used is gouyot with a density of 4,600 plants per hectare and guarantees a production of about 20 hl per hectare. In the cellar the wine ferments 28 days in a steel tank in contact with the skins, of which 4 days of pre-fermentation cold maceration and 24 of fermentation and post-fermentation maceration at a temperature between 30/32 ° C. Remontages are made daily in the air with the application of an ancient system called "submerged hat". At the end of the malolactic fermentation in barriques, which lasted four weeks, the wine was transferred to oak barrels for 31 months. Bottled without filtration in July 2013
