The Barolo of the Municipality of Serralunga Docg 2012 is the most immediate of the Barolos produced by the company run by Ferdinando Principiano. Nebbiolo grapes ripen on 3.5 hectares of land, from young vines planted in the Boscareto valley to Serralunga d'Alba; in the vineyard the agronomic conduction is impeccable without the use of any chemical substance, no official certification but agriculture can be considered to all effects biological. The grapes are harvested at the beginning of October, particular attention is paid to the productive balance of the plant and the right ripening of the grapes. The pressed grapes ferment without inoculation of yeasts and without sulfur dioxide for about a month, after which the wine is aged for twenty-four months in barrels of 20 and 40 hectoliters and subsequently in about 20,000 bottles produced.
