The Hermitage Rouge 2018 of Domaine Dard & Ribo comes from Syrah grapes grown in the owned vineyards located in Tain l'Hermitage and conducted in Biodynamic. In the cellar the grapes are 90% de-stemmed, the remaining non-de-stemmed part will favor a spontaneous fermentation without selected yeasts; the macerations last 20 days and the refinement is done in 500-liter barrels for over a year and a half.
At sight it shows a very deep ruby red color, with light reflections tending to purple. The nose has notes of clove, pepper, iron and wild blackberry. In the mouth it is medium-bodied, with a nice acidity and firm tannins.
Wine capable of evolving well for many years.
Drink it at a temperature of 16-18 ° C. Perfect with second courses of meat, both red and white, cooked with different preparations. Also to be tried with mature soft cheeses, it gives its best with pigeon breast.
