The glass has a very deep ruby color. The nose is pure, airy and fragrant on aromas of black fruits, spices and leather; in the mouth it is biting, the tannins are very tight and convincing. Equipped with a large, mineral sip, from the excellent acidity it will evolve for many years increasing in complexity and dynamics.

PRODUCT DESCRIPTION

It comes from Pinot Noir grapes grown and grown in Gevrey Chambertin in the 0.61 hectares of vineyards that the Domaine Tortochot owns in the Premier Cru Lavaux St-Jacques, positioned at the foot of the Combe de Lavaux and bordering on the left with the Clos St. Jacques. The vines were planted on clay-limestone soils with the presence of many fossils, the exhibition faces south; the density is around 10,000 plants per hectare. Pinot Noir was harvested after mid-September and vinified by maceration for 20 days with spontaneous fermentation; subsequently the wine was transferred to new pieces at 50% where it was aged for 18 months and then bottled. Only indigenous yeasts are used.
