This splendid Barolo comes from Nebbiolo grapes grown in the renowned Acclivi Vineyard, a real Crù from the Municipality of Barolo; the soils are of medium calcareous mixture tending to sandy and south and south-east facing. In the vineyard the Guyot system is used with yields around 60 q / ha. The manual harvest is conducted in the second decade of October; vinification involves a 15-day fermentation-maceration in French oak vats, with daily pumping over and punching (temperature control is provided in the event of excessive rises). Subsequently the wine matures for about 10 months in drums of 3-5 Hl (where it also carries out malolactic fermentation) and for about 20 months in 35 Hl French and Slovenian oak barrels. After bottling, carried out in August, the wine rests in the cellar for at least 12 months before being marketed.
