It is made from Pinot Noir grapes grown and grown in the parcel of properties of 0.8 hectares with vines average age of 70 years in the prestigious Grand Cru Echezeaux. The vinification involves a manual harvesting and complete destemming. A cold pre-fermentation period follows between 3 and 5 days which anticipates the actual fermentation which lasts about 15-20 days where daily replacements are made. The wines are aged in oak barrels (new around 70%) for 16 months.
Nice elegant ruby red, quite light in intensity. Absolute clarity. Complex, intense, fine nose. Peach, cherry, apricot, yellow pulp fruit. Cedar wood, sweet notes of cocoa and then again fruit, but this time more exotic: Mango, papaya. Silky and velvety on the palate, it brings back the sweet note of cocoa more intensely, almost a dark chocolate and closes on a very long, interminable finish.
Wine with excellent aging potential.
Taste it at a temperature of 16 ° -18 °, paired with a shoulder of lamb with herbs.
