Born from Pinot Noir grapes grown and grown in the parcel owned by 1 ha with vines average age of 10 years in the municipality of Morey Saint Denis. The vinification involves a manual harvesting and complete destemming. A cold pre-fermentation period follows between 3 and 5 days which anticipates the actual fermentation which lasts about 15-20 days where daily replacements are made.
