It comes from Pinot Noir grapes grown and grown in the 1.5 hectare property parcel with vines 40 years old in the municipality of Vosnee Romanée. The vinification involves a manual harvesting and complete destemming. A cold pre-fermentation period follows between 3 and 5 days which anticipates the actual fermentation which lasts about 15-20 days where daily replacements are made. The wines are aged in oak barrels (new around 30%) for a period ranging from 15 to 18 months depending on the vintage. Deep and intense red wine, the nose turns to floral scents while in the mouth we find spicy flavors for an elegant, powerful wine with a good final stretch.
After a particularly short winter, the months of February and March are almost spring, dry, with even a record of heat for the season on February 27, favoring the awakening and early development of the vines. On April 5th there is a first morning frost followed by four others until May 7th. Winegrowers run for cover by lighting fires to protect the vines. The summer of 2019 is one of the hottest known with two heat waves: one in late June and the other in late July. In some places it will exceed 40 ° C. Fortunately, the month of August brings rains that allow nature to regenerate. The climate is cool at the beginning of September to warm up as the harvest approaches, which begins in the middle of the month.
Deep ruby red. It expresses itself on intense and deep hints of ripe dark berry fruit, withered flowers and sweet spices. In the mouth it is enveloping and elegant, rich and velvety, supported by a nice acidity. The sip is full and full-bodied, centered on the fruit and enriched by a refined and unmistakable mineral trace. Closes on very long and persistent fruity tones.
Wine with good aging capacity (8-10 years).
Taste it at a temperature of 16 ° -18 ° C combined with lamb.
