In the vineyard herbicides and chemicals are banned, "natural" viticulture is practiced. The harvest is manual, with selection of the best grapes; the vinification is traditional, with the use of indigenous yeasts and fermentation in steel in open vats at controlled temperature (32 ° C). The wine rose to 10% in new barriques for a total duration of 12 months.
