After the harvest took place the first week of October, the pomace remains in contact with the must for 3 weeks, kept in immersion by means of comebacks throughout the period of alcoholic fermentation. Then the malolactic fermentation takes place in the cellar at a temperature of 20 ° C in traditional Slavonian oak barrels of 10-20 hl for 18 months. Filtration and clarification are not provided.
