It comes from Pinot noir grapes grown and grown in vineyards classified with the appellation Beaune 1er Cru AOC. In the vineyard Vincent Dancer applies the dictates of organic farming; in the cellar the vinification is carried out in the most natural and traditional way possible, indigenous yeasts are used for spontaneous fermentations lasting 15-20 days. The wine ages in small barrels for 15 months; a further rest in glass follows without undergoing clarification or filtration.
In the glass it has a splendid dark ruby red color, rather opaque and not very penetrating. The nose opens on smoky scents, which slowly give way to references of small red and black fruit. The sip pampers the palate with an articulated and complex profile, in which the smoothness of the tannins is appreciated. Rich and mature, it closes with a persistent finish.
Wine with excellent evolutionary abilities.
Taste it at a temperature of 16 ° C. Try it with noble poultry, it is also excellent with fresh pasta stuffed with meat.
