It comes from Nebbiolo grapes grown in the 2.7 hectares of land in the Ravera vineyard, in the municipality of Novello. The grapes, once harvested, were vinified by alcoholic fermentation activated by indigenous yeasts and 35-day maceration in steel tanks (5 of which by pre-fermentative cold maceration). The wine is then spent in large barrels where malolactic fermentation takes place until late spring. Aging takes place for 32 months in large traditional oak barrels, bottling took place in July 2014.

From the single Ravera vineyard located in the municipality of Novello, with about 4500 plants per hectare of 26 years of average age. The oldest part was planted in 1935. Ravera di Novello is a fabulous hill with south-west exposure, with calcareous-clay soil. With an area of approximately 3 hectares. The fermentation lasts about 4/5 weeks in a steel tank in contact with the skins. This time includes pre and post fermentation maceration with the use of the ancient method of the submerged cap. Slow malolactic fermentation in barrels until late spring. The wine therefore remains for over a year on the lees of malolactic fermentation without racking. The aging lasts 32 months in large oak barrels.

TASTING NOTES

Intense garnet red color. Very classic and traditional with a robust structure and intense tannins. Bouquet takes a little time to show itself with slight hints of yeast. It opens slowly in the glass touch of spice and menthol. In the final, the powerful structure and concentration soften the tannins potential.
