It comes from Pinot Noir grapes grown on 0.35 hectares of vineyards owned by the Domaine Heresztyn Mazzini, located in Gevrey Chambertin from vines planted from 1926 to 1952. The grapes are transferred to steel containers where, with the use of only yeasts indigenous, the alcoholic fermentation takes place which follows a cold pre-fermentation. The "Pigeage" are short and frequent depending on the year. The bunches are used for 55/70% entirely. The wine is aged in wood barrels used for a 70% for the duration of 18 months.
WORKING THE VINE
Since vintage 2016 we have chosen to convert our parcels of vines to organic agriculture and to work with conviction in biodynamic growing methods and plant-based treatments. The soils of all the parcels of the domain are worked sparingly so as to maintain their microbiological life systems. To improve the yield, once pruned our vines are de-budded and thinned early, by hand. We may choose a green harvest.
The finesse of this elegant wine will delight your palate. It displays a wide range of red fruit and spicy notes typical of old vines Pinot Noir. The wine shows great complexity on the palate along with nice freshness. It will readily express full potential even in its early years.
Wine in drink since 2020 with good aging potential.
Taste it at a temperature of 16 ° C with game dishes.
