wine description
The Brouillard vineyard of 1.5 hectares (planted between 1947 and 1955) lies at the foot of the village of Volnay and received its name from a small forest in feudal times. The slope offers good drainage and has a south-east exposure for a good maturation. Harvested by hand in small boxes, the yields are around 30 hL / ha. Fermentation occurs naturally in vats fed by gravity with indigenous yeasts and a maceration time of about 15 days. Aging takes place in oak barrels with a maximum of 20% new oak, from 14 to 18 months depending on the harvest. After racking without a pump, the bottling is done without clarification or filtration.
