It comes from Pinot Noir grapes grown on 0.18 hectares of vineyards owned by the Domaine Heresztyn Mazzini, located in Chambolle Musigny from vines planted in 1961 and 1999. The grapes are transferred to steel containers where, with the use of only indigenous yeasts, alcoholic fermentation takes place which follows a cold pre-fermentation. The "Pigeage" are short and frequent depending on the year. The bunches are used depending on the vintage between 50% and 100% entirely. The wine is aged in wood barrels used for a 70% for the duration of 18 months. The wine is bottled without fining or filtration and following the lunar calendar. Wine with a pleasant bouquet of red berries where the characteristics of the terroir make it full-bodied and structured on the palate but with gentle tannins.
WORKING THE VINE
Since vintage 2016 we have chosen to convert our parcels of vines to organic agriculture and to work with conviction in biodynamic growing methods and plant-based treatments. The soils of all the parcels of the domain are worked sparingly so as to maintain their microbiological life systems. To improve the yield, once pruned our vines are de-budded and thinned early, by hand. We may choose a green harvest.
