It comes from Pinot Noir grapes. The French saying reads "Who has not drunk Caillerets does not know the value of Volnay". the Volnay Premier Cru "Les Caillerets" illustrates all the grandeur of this exceptional terroir, located in the Côte de Beaune, in Burgundy. The vineyard covers an area about 0.68 ha. Harvested by hand in small boxes, the harvests are around 25 hL / ha. Fermentation of about 30-50% of whole bunches takes place spontaneously with indigenous yeasts and about 15 days of maceration. Aging takes place in oak barrels, maximum 20% new, for 14-18 months depending on the vintage. Bottling is carried out without clarification or filtration.
In the glass it has a beautiful ruby red color, quite deep. On the nose there is a pleasant scent of fruit, accompanied by floral and spicy nuances. On the palate it is elegant, fine, with a good body and a fruity olfactory aftertaste.
Wine with excellent aging potential.
