Ripasso takes its name from a very ancient technique born in Valpolicella and used to elevate wines of value. By passing the Valpolicella wine over the Amarone marc, the wine extracts alcohol color and structure from the skins. The result is a warm, medium alcoholic wine with a typical hint of ripe fruit and spices

WINE DESCRIPTION

The vines grow in the territory of San Pietro in Cariano on predominantly red and brown soils on debris, calcareous marl and basalts. Bunches chosen and collected in late harvest. Traditional vinification on the skins with maceration in the tank for 15-25 days with subsequent 30-day “review” on the marc. Aging takes place in oak barrels and barriques for 2 years and then in steel.

CLIMATE

A good year 2018, especially for the quantity of grapes compared to the previous year. After a winter with average temperatures with a peak of cold between the end of January and February with temperatures below zero and abundant rainfall, the budding of the vines arrived in the first days of April. Spring was marked by a very humid and hot climate, the spring rains continued until mid-June. Flowering and subsequent fruit set are completed in the first week of June. At the beginning of summer, temperatures were in the average, from the end of June the rains disappeared and gave way to sunny days with ideal temperatures, a situation that lasted until the end of July. At the end of July, some short rainfall occurred which favored the temperature range between day and night. Subsequently, especially between August and September, the temperature differences between night and day allowed the grapes to reach an exceptional phenolic ripeness.

TASTING NOTES

The Valpolicella Ripasso Superiore 2018 of the Pietro Zardini Farm shows a beautiful bright ruby red color with some garnet reflections. The nose is velvety, elegant with hints of dried fruit and spices. In the mouth it is rich, with a harmonious body.

AGING CAPACITY

Ready-to-drink wine with ample room for improvement.

SMALL TIPS

Taste it at a temperature of 18 ° C. Recommended with grilled red meats, pasta with sauces, roasts and fermented cheeses.
