It comes from Pinot Noir grapes grown on 0.38 hectares of vineyards owned by the Domaine Heresztyn Mazzini, located in Gevrey Chambertinda vines planted in 1981 on thin layers of white marl, on upper limestone rocks. The grapes are transferred to steel containers where, with the use of indigenous yeasts alone, the alcoholic fermentation takes place which follows a cold pre-fermentation. The "Pigeage" are short and frequent depending on the year. The bunches are used for 50-55% entirely. The wine is aged in wood barrels used for a 70% for the duration of 18 months.

The wine is bottled without fining or filtration and following the lunar calendar. This wine needs time to find its full expression and offer its full potential. Acacia notes are revealed at the beginning of the maturation process. Over the years it becomes a very charming wine, developing in finesse rather than in strength.
WORKING THE VINE
Since vintage 2016 we have chosen to convert our parcels of vines to organic agriculture and to work with conviction in biodynamic growing methods and plant-based treatments. The soils of all the parcels of the domain are worked sparingly so as to maintain their microbiological life systems. To improve the yield, once pruned our vines are de-budded and thinned early, by hand. We may choose a green harvest.
