It comes from Pinot Noir grapes grown on 0.37 hectares of vineyards owned by the Domaine Heresztyn Mazzini, located in Morey st Denis from vines planted in 1958. The grapes are transferred to steel containers where, with the use of indigenous yeasts only , alcoholic fermentation takes place following a cold pre-fermentation. The "Pigeage" are short and frequent depending on the year. The bunches are used for 60/70% entirely. The wine is aged in wooden barrels used for a 60% for the duration of 16/18 months.

Since vintage 2016 we have chosen to convert our parcels of vines to organic agriculture and to work with conviction in biodynamic growing methods and plant-based treatments. The soils of all the parcels of the domain are worked sparingly so as to maintain their microbiological life systems. To improve the yield, once pruned our vines are de-budded and thinned early, by hand. We may choose a green harvest.
