It comes from Pinot Nero grapes grown and grown in vineyards classified with the appellative Bourgogne Marsannay AOC. Cultivation of vines

The vines are grown organically and a simple guyot pruning is used. All the work in the vineyard is done by hand. The vines are planted at a density of 10,000 plants per hectare.

vinification and aging

Once harvested, all the grapes are destemmed, undergo a cold maceration and ferment with natural yeasts. Yann prefers a long and slow lifting on the fine lees. The grapes are pressed in the tank and decanted in barriques where they rest for 16 months. Aged in barrique (30% new) for 16 months. Bottled without any filtration.
