Côte de Nuits Villages Vieilles Vignes of Domaine Charlopin Tissier comes from a single limestone-clay plot of 0.47 hectares of old vines planted in the Côte de Nuits. This is the last vineyard that Yann collects every year. Once harvested, all the grapes are completely de-stemmed, undergo a cold maceration and are fermented with natural yeasts. Yann prefers a long and slow levage on fine lees. The grapes are pressed into tanks and decanted into barriques where they rest for 16 months. Aging in barriques (30% new) for 16 months. Bottled unfiltered.
Cultivation of vines
The vines are grown organically and a simple guyot pruning is used. All the work in the vineyard is done by hand. The vines are planted at a density of 10,000 plants per hectare.
Tasting notes
Bright ruby in color, the nose has hints of red fruits such as raspberry and cherry, notes of violet, licorice and eucalyptus. In the mouth it is fresh, balanced, with still young tannins. Persistent.

Taste it at a temperature of 16 ° C. Excellent with slightly spicy and sweet and sour preparations such as duck with orange and tagine. It goes perfectly with cow's milk cheeses.
