CHARACTERISTICS OF THE WINE


The grapes come from owned vineyards located in the flat part of the first Bolgheri valley, in the municipality of Castagneto Carducci in the locality of Olmaia - Guado al Melo, completely surrounded by woods and Mediterranean scrub, with east / west exposure. The soil is of alluvial clayey and sandy origin, with the presence of pebbles, scientifically defined as Conglomerate of Bolgheri. The vineyard is trained with spurred cordon with certified rootstocks and sixth of 5600 plants per hectare. The particular microclimatic condition allows a progressive ripening of all the varieties and in particular of the Cabernet Sauvignon with a delayed harvest of about a week compared to the neighbors which produces a greater softness of the tannins.

HARVEST AND VINIFICATION TECHNIQUE

The 2006 harvest was carried out completely by hand in mid-September, following a regular summer with average seasonal temperatures and low rainfall. In the Olmaia and Guado al Melo valleys, this climatic trend has favored the aromatic contents with excellent phenolic maturation. Fermentation took place in temperature-controlled stainless steel containers, with a maceration of about 15 days. Maturation was carried out in French oak barriques from November for 48 months, with spontaneous malolactic fermentation. The barriques used are 50% new and first passage for the remainder. Refinement in the bottle lasts from 6 to 12 months before being marketed.

TASTING NOTES

Intense and brilliant ruby color. Perfume characterized by aromas of red and black fruits, pleasantly flanked by strong spicy notes. Intense and fresh but elegant taste, supported by a harmonious and powerful structure that lends itself well to a long aging in bottle. It is served at a temperature of 14-16 ° C, in combination with red meat dishes, game, cold cuts and aged cheeses.
