Classic vinification in wine presses of the blend of vines with 100% of stalks. The must is cooled to allow the greatest possible travel time before fermentation begins. After this occurs spontaneously the mechanical phase is performed regularly until the pressing and addition of selected brandy. The wine matures in barrels and wooden vats and is bottled two years after the harvest.
