Cultivation of vines
The vines are grown organically and a simple guyot pruning is used. All the work in the vineyard is done by hand. The vines are planted at a density of 10,000 plants per hectare.
vinification and aging
Once harvested, all grapes are fully de-stemmed, undergo a cold maceration and are fermented with natural yeasts. Yann prefers a long, slow élevage on the fine lees. The grapes are pressed to tank and racked to barrique where it rests for 18 months. Aged in barrique (50% new) for 18 months. Bottled unfiltered.
tasting notes
In the glass it shows a quite bright and luminous ruby red color. The range of aromas that branches off to the nose highlights notes of cherry, wild blackberry, plum, menthol, licorice and spices. On the palate it is medium-bodied tending to full, elegant, silky, with a perfectly worked tannic texture integrated with the sip.
