It comes from Pinot Noir grapes grown and grown in the Vecchie Vigne owned located in the Municipality of Volnay; in the vineyard a natural and little interventionist viticulture is practiced. The soils are of a very draining mixed type with the presence of clay mixed with fossils (oysters and sea lilies) and the area enjoys excellent and if not high ventilation especially in summer evenings. The harvest is manual and allows the harvest of perfectly healthy and well ripe grapes; in the cellar the fermentation is activated only by indigenous yeasts with the vinification that involves the use of two thirds of grapes not destemmed. Aging takes place in 80% new wood for 18 months.
Winter 2016-17 is consistent with our continental climate with its alternations of freezing and thawing that allow the earth to decompose and eliminate some microorganisms. Spring is very early with very mild temperatures in March which favor an accelerated growth of the vines. However, temperatures cooled in April 2017 and, a year and a day after the terrible frost of April 27, 2016, a new period of frost was on the horizon. The mobilization of the winemakers is exceptional and everyone is present in the vineyards before dawn to light fires of straw, whose smoke shields and prevents the first rays of sun from burning the young shoots. Upon visual examination it assumes a bright ruby red color. The bouquet of aromas that develop on the nose tells clean notes of currant, blueberry, tobacco and mint. On the palate it has a medium body, with a juicy and dry sip, very smooth.
Wine with good aging potential albeit in drink.
Taste it at a temperature of 16 ° -18 ° C. Also excellent with aged cheeses such as Époisses di Bourgogne, it is a must try with roast duck breast.
