Wine description
It comes from Pinot Noir grapes grown in Volnay, in the vineyard classified Volnay 1er Cru Clos des Chênes AOC; The Clos des Chênes is a 1st Cru of Volnay located near Monthelie and has received its name from the ancient oaks that have adapted to the calcareous soil. The parcel of property is composed of 2 parts: one of old vines planted in 1938 on brown calcareous soil with much clay, and the other in the highest part is composed of younger vines planted in 2002 on white marl. The two plots put together are almost 0.5 ha with southern exposure. Harvested by hand in small crates, the crops are around 35 hL / ha. Fermentation takes place spontaneously in tanks with indigenous yeasts and about 15 days of maceration. Aging takes place in oak barrels, up to 30% new, for 14-18 months depending on the vintage. Bottling is carried out without clarification or filtration.
