This cuvée comes from a single plot located in the plain of Pommard in a place called Les Noeuds
Vine and Terroir
Born from a plot of 1.17 hectares planted with Pinot Noir in the 60s, it lies on deep clayey soils and is crossed by a limestone vein, which allows it to express crunchy fruits and a silky and coated structure.
First vintage of the domaine certified in organic farming. 2018 was productive, balanced and of high quality. It is a warm year, which was regularly watered and which offered magnificent ripe and perfectly formed clusters. The whites of the 2018 vintage are of great finesse. In the mouth they are fleshy, greedy and have aromas of yellow fruits. The 2018 vintage reveals elegant, fine and fresh red wines.
Vinification and Aging
The harvest is manual and the grapes are 100% destemmed. Fermentation occurs spontaneously thanks to the work of indigenous yeasts and takes place in stainless steel tanks for 15-20 days. Every year the indigenous yeasts, naturally present on the grapes, offer a different fermentation profile, which are left to express to preserve the typicality of the vintage. A soft extraction is preferred, mainly carried out through pumping over. This wine is then aged for 12 months in oak barrels, without new barrels, then the end of the refinement takes place for 6 months in vats before bottling. All the red wines of the Domaine Genot-Boulanger are neither clarified nor filtered.
Coming from an old grape variety, the cuvée is completely atypical in relation to its denomination. This Burgundy Pinot Noir offers a beautiful aromatic range of black fruits. It is a wine that has character and depth, with many things to tell throughout its tasting.
Wine with good aging potential.
Taste it at a temperature of 16-18 ° C. Excellent in combination with meat first courses, it also goes very well with white meats; it is to be tried with woodcock croutons.
