Wine Description
It comes from four adjacent plots located in Volnay at the foot of the hill, south-east of the village and close to the 1er Cru grape "les Roncerets". They are called: "les Aussy", "les Echards", "les Jouères" and "Cros Martin".
Vine and Terroir
The four plots of land from which the grapes used for the production of Volnay Vieilles Vignes come cover a total of 1.28 hectares. "Les Echards" were planted in the 1950s and are part of "Les Jouères". The other part was planted in the 1980s as "les Aussy" and "Cros martin". The land has a slight slope, on a limestone substrate covered with clays that retain water and is made up of silt superimposed on old floods.
Climate
First vintage of the domaine certified in organic farming. 2018 was productive, balanced and of high quality. It is a warm year, which was regularly watered and which offered magnificent ripe and perfectly formed clusters. The whites of the 2018 vintage are of great finesse. In the mouth they are fleshy, greedy and have aromas of yellow fruits. The 2018 vintage reveals elegant, fine and fresh red wines.
Vinification and Aging
Manual harvest, 100% destemming of the grapes. During the 3-4 weeks of racking, fermentation takes place with minimal intervention. A long fermentation is carried out (between 2 and 3 weeks) with 1 or 2 pigeage and mainly pumping over to obtain delicate extractions. Every year the indigenous yeasts, naturally present on the grapes, offer a different fermentation profile, which are left to express to preserve the typicality of the vintage. A soft extraction is preferred, mainly carried out through pumping over. This wine is then aged for 12 months in oak barrels, without new barrels, then the end of the refinement takes place for 6 months in vats before bottling. All the red wines of the Domaine Genot-Boulanger are neither clarified nor filtered.
Tasting notes
The nose is more spicy than Pommard, with notes of cloves and peppers that intertwine with hints of berries. The fruit gradually emerges from the aeration. The flavor matches the aromas: the wine is full-bodied, with a grain of crunchy tannin and a frank vitality, it is the energy of Volnay that speaks and the wine is both built and elevated: very lively
Aging capacity
Wine with excellent aging potential.
Small Tips
Taste it at a temperature of 16-18 ° C. It goes well with red and white meat dishes as well as medium-aged cheeses. Also try with grilled meat, especially poultry or veal.
