Wine Description

This cuvée comes from three plots located in Pommard. The plot "Les cras" which is located at the foot of the hill, because the origin of the word Cras derives precisely from "stony slope". The plots "Les Vignots" and "La Chanière" which are located on the slope above Pommard, on more calcareous soils.

Vine and Terroir

The three plots represent a total of 2.22 hectares. The Cras lot faces east and the other two face south. At the top of the hill the ground is deep and stony clayey-limestone, down towards Les Cras the ground is made up of stony scree and pebbles.

Climate

First vintage of the domaine certified in organic farming. 2018 was productive, balanced and of high quality. It is a warm year, which was regularly watered and which offered magnificent ripe and perfectly formed clusters. The whites of the 2018 vintage are of great finesse. In the mouth they are fleshy, greedy and have aromas of yellow fruits. The 2018 vintage reveals elegant, fine and fresh red wines.

Vinification and Aging

Manual harvest, 100% destemming of the grapes. During the 3-4 weeks of racking, fermentation takes place with minimal intervention. A long fermentation is carried out (between 2 and 3 weeks) with 1 or 2 pigeage and mainly pumping over to obtain delicate extractions. Every year the indigenous yeasts, naturally present on the grapes, offer a different fermentation profile, which are left to express to preserve the typicality of the vintage. A soft extraction is preferred, mainly carried out through pumping over. This wine is then aged for 12 months in oak barrels, without new barrels, then the end of the refinement takes place for 6 months in vats before bottling. All the red wines of the Domaine Genot-Boulanger are neither clarified nor filtered.

Tasting notes

The wine has a bloody and intoxicating bouquet, the fruit is very ripe and generous, it splashes the senses like when you pick cherries and eat one out of two. An irresistible nose. In the mouth it is very round, widely spread and at the same time its substance is not very tannic and its passage leaves a slight impression, which surprises in this appellation. It is a soft and airy Pommard!

Aging capacity

Wine with excellent aging potential.

Small Tips

Taste it at a temperature of 16-18 ° C. It goes well with red and white meat dishes as well as medium-aged cheeses. Also try with grilled meat, especially poultry or veal.
