AOC Chambolle-Musigny produces great red wines. The name of the municipality derives from Campus Ebolliens, or Champ Bouillant, which describes the liveliness of the river that crosses the municipality. This wine is born from the assembly of vines located in the localities: "les Nazoires" and "les Mombies".
Vine and Terroir
The two plots, with a total area of 0.76 hectares, are located below the village, at the foot of the hill. They rest on a ground made up of limestone, pebbles, gravel and scree from the village valley.
First vintage of the domaine certified in organic farming. 2018 was productive, balanced and of high quality. It is a warm year, which was regularly watered and which offered magnificent ripe and perfectly formed clusters. The whites of the 2018 vintage are of great finesse. In the mouth they are fleshy, greedy and have aromas of yellow fruits. The 2018 vintage reveals elegant, fine and fresh red wines.
Vinification and Aging
Manual harvest, 100% destemming of the grapes. During the 3-4 weeks of racking, fermentation takes place with minimal intervention. A long fermentation is carried out (between 2 and 3 weeks) with 1 or 2 pigeage and mainly pumping over to obtain delicate extractions. Every year the indigenous yeasts, naturally present on the grapes, offer a different fermentation profile, which are left to express to preserve the typicality of the vintage. A soft extraction is preferred, mainly carried out through pumping over. This wine is then aged for 12 months in oak barrels, without new barrels, then the end of the refinement takes place for 6 months in vats before bottling. All the red wines of the Domaine Genot-Boulanger are neither clarified nor filtered.
When you smell the scent of this wine you can feel an evanescent farandole: a quadrille of red fruits with notes of strawberry, currant and cranberry. Noble and airy, on the nose it immediately recalls the singular class of this denomination. The mouth continues the definition: it shows grace and finesse. The wine is fresh, slightly full-bodied with almost imperceptible tannins. The aromas of fruit return to the aftertaste, of which we keep their complexity and slender movement.
Wine with excellent aging potential.
Taste it at a temperature of 16-18 ° C. It goes well with red and white meat dishes as well as medium-aged cheeses. Also try with grilled meat, especially poultry or veal.
