Wine description
Born from Pinot Noir grapes, the peculiarity of the "Santenots" terroir is to be located entirely in the municipality of Meursault despite being a 1er cru of Volnay. The name derives from the Latin word meaning "paths". The red limestone soil is littered with gravel and clay on this south facing slope. The 0.68 ha vineyard is composed of two parts of vineyard planted in 1989 and 1997. Hand-picked in small crates, the crops are around 25 hL / ha. Fermentation of about 30-50% of whole bunches takes place spontaneously with indigenous yeasts and about 15 days of maceration. Aging takes place in oak barrels, maximum 20% new, for 14-18 months depending on the vintage. Bottling is carried out without clarification or filtration.
