Emidio Pepe's Cerasuolo d'Abruzzo was born in Torano Nuovo (TE), the 10Ha of vineyards that give life to the splendid Montepulciano grapes are located in the various farms gathered around the winery, all with south-east exposure; the composition of the soil is of a medium-textured clayey type. The breeding is both a tent (age 40 years) and a row: the leaves of the tent protect the bunches when it is too hot while the rows allow the soil to breathe when it rains a lot. The yield is around 90-100 puintals per hectare, the plants are treated only with natural products: mining sulfur and copper water and practically non-existent processes with the aim of preserving biodiversity. The grapes are de-stemmed by hand in wooden vats, fermentation takes place in vitrified cement tanks (excluding the use of selected yeasts or other handling). Bottling is done by hand with siphon and cane cinnamon, excluding clarification and filtration. Agriculture is Biodynamic-Organic certified.
Expressive and sincere, it offers a nice feeling of fullness on youthful tones of cherry, juice of red fruits, pomegranate and roses; in a second moment the balsamic aspect takes over. The sip is dry, tasty and crisp and fresh cherry; in the center of the mouth the tactile sensations are enhanced by a pleasant tannin and a characteristic flavor. Alcohol is well integrated and weaves a pleasant texture; long and corresponding finish in the aromas in the retro nasal way.
Wine ready but capable of aging well.
Taste it at a temperature of 10-12 ° C combined with cold cuts or first courses with meat sauces.
