wine description

It comes from Chardonnay grapes grown in the 0.40 hectares of property located in the Premier Cru Vaillons vineyard, located on the left bank of the Le Serein river, in Chablis. The exposure of the vines is entirely south-west, the soils are mainly composed of limestone dating back to the Kimmeridgian. In the vineyard the philosophy is of a sustainable and natural viticulture, the harvesting is done manually. The vinification is activated by indigenous yeasts and takes place in steel where the juice rests and stabilizes. Alcoholic fermentation lasts two weeks and is followed by malolactic fermentation in cask; the wine is aged for 18 months in old wood and a small part in new wood.

tasting notes

At sight, straw yellow with greenish hues. The nose is expressed on complex notes of fresh fruit, white peach, and delicate white flowers with a strong mineral trace. On the palate, the wine is expressive: bold and mineral sip, it develops with a beautiful gustatory persistence on fruity aromas. It closes long and harmonious.
