It comes from Chardonnay grapes grown in the 1.49 hectares of property located in the Premier Cru Butteaux vineyard, located on the left bank of the river Le Serein, between the municipalities of Chablis and Courgis. The wine has a bright straw yellow color; the nose is mineral, airy, limpid and crystalline. Mouth with a tense and mineral impact, gustatory dynamics of value and ever-present tension.

Wine Description

It comes from Chardonnay grapes grown in the 1.49 hectares of property located in the Premier Cru Butteaux vineyard, located on the left bank of the river Le Serein, between the municipalities of Chablis and Courgis. The exposure of the vines turns entirely to the south and south-east, the soils are rounded and very draining, mainly composed of limestone dating back to the Kimmeridgiano. In the vineyard the philosophy is of a sustainable and natural viticulture, the harvesting is done manually. The vinification is activated by indigenous yeasts and takes place in steel where the juice rests and stabilizes. Alcoholic fermentation lasts two weeks and is followed by malolactic fermentation in cask; the wine is aged for 18 months in old wood and a small part in new wood.

It has a straw yellow color. The nose shows immediate elegance and balance between an aromatic richness reminiscent of dried fruit and the fragrance of citrus notes, focused on lemon zest. On the palate it reveals good acidity and a full, smooth sip. Mineral in closing and long persistence.
