It comes from Chardonnay grapes grown and grown in Chassagne Montrachet. In the vineyard Vincent Dancer applies the dictates of organic farming; in the cellar the vinification is carried out in the most natural and traditional way possible, indigenous yeasts are used for spontaneous fermentations lasting 15-20 days. The wine ages in small barrels for 17 months; a further rest in glass follows without undergoing clarification or filtration.
Intense straw yellow in the glass, with clear golden highlights. Floral memories open the nose, then marked by notes of ripe yellow fruit. The taste is consistent and material, consistent with the nose and of long persistence.
Ready-to-drink wine but does not mind a few years of bottle aging.
Taste it at a temperature of 12 ° C. To be paired with structured fish-based second courses, it is excellent to accompany sea bream in a salt crust.
