It comes from Chardonnay grapes grown in the AOC Chablis vineyards, with south-south east exposure; the wine during vinification sees only steel, we find it in the crystal clear glass; the nose is thin and delicate on scents that recall citrus and the sea. the age of the plants is between 5 and 50 years old and has its roots in clay soils, very deep and rich in limestone and fossils. The wine is made with only indigenous yeasts, in tanks with regulated temperatures; here it also carries out malolactic fermentation spontaneously. Aging on fine lees takes place in stainless steel tanks for 6 months at least up to 18 months depending on the vintage.
To drink between 2018-2022.
Tasting at a temperature of 12 °, to combine with appetizers or Burgundy snails.
